Christmas was fantastic!  I just love being home with my family, relaxing, playing and eating.  Several of Judson's siblings were in town for the holidays, so it was fun to have them over on not only Christmas Eve but Christmas day as well.  Now onto New Years Eve and and new year!  We're planning a taco bar for New Year's Eve, and the traditional Fondue at 2 at Judson's sister's home for New Years Day.  We thought about going skiing, but it's so so cold outside!  That will have to wait until it warms up a bit.

The week of Christmas has arrived!  What a fun time of year.  I really love everything about the holidays (except maybe my shrinking wallet:), and I think the food is a major component!  I really try to keep things simple so I'm not in the kitchen while everyone else is having fun.  But I also want it to taste delicious and be special.  On Christmas day I have a tradition of cooking up a million rolls (I use Rhodes--easy!), having several different deli meat and cheese choices, yummy dips with crackers and veggies, and salads.  I set everything out, and invite anyone over that is able.  We play games, watch movies, take on a little xbox, etc.  Super fun!  This year we're hosting the Wall family Christmas Eve Celebration.  When Jud's parents are out of the country (which is actually quite often, they are currently on mission #7, or is it #8?, I've lost track!) we take over for Christmas Eve.  We love having family over to share this special time.

Such a fun time of year and the weather has been absolutely gorgeous!  Shout out to my Brooks for making the Junior High basketball team--one of only two seventh graders!  Landon is loving the thought of a 'Halloween Week', making haunted candy houses on Tuesday, Halloween parade and party on Thursday and Trick or Treating on Friday.  Keaton is busy filling out scholarship applications. He just finished a grueling week with student body officer stuff, hopefully we'll see him around a bit more this week.  Chase can't wait for the snow to fly.  All of his extra time is devoted to researching out which snowboard he wants for this season.  I'm trying to wrap my head around starting Christmas shopping.  REALLY????

Another great seminar given at Dental Solutions in the books!  Judson taught dentists from all over the world.  We had dentists from Canada, California, Colorado, Maryland, Idaho, Germany and the Czech republic attend his course.  I catered the event, and the food was a home run.  Feeding 27 people is no easy task, but I had fun.  Here's what I served:

Friday Breakfast:  Breakfast Burritos buffet style with tortillas, eggs, hashbrowns, bacon, sausage, homemade refried bean, cheese, pico, and guacamole.  Juices and water to drink.
Friday Lunch:  Greek food presented by Roulas--chicken souvlaki, lemon rice, greek salad, pita and tzaziki, and a sweet sample including brownies, rice krispie treats and cookies

Saturday Breakfast:  My favorite french toast casserole made with these variations:  raspberry almond, apple, apple pecan and blueberry.  Served with bacon, sausage, yogurt, and boiled eggs with juice and water to drink.
Saturday Lunch:  Kneaders sandwich platters and soups (tomato basil and baked potato), pear and pecan salad, and Kneaders dessert tray.
Monday:  Cheesy Artichoke Chicken with Basil over Angel Hair Pasta with Fruit
Tuesday:  My Favorite Tacos!
Wednesday:  BBQ Chicken, Sweet Potato Fries, and Blueberry Mango Green Salad

Busy week ahead!  We have dentists coming from all of the US and Canada for a course Jud is teaching.  I'm doing the food for the course, and will most likely stick to my menu of the previous courses.  BUT I need to find some Paleo alternatives, as I found with our last group that more than half of them ate paleo. Homecoming week done!  I can't believe it was Keaton's last one!  Because he's an officer, this last week was especially crazy for both of us (but mostly for him:).  He did a great job on his assembly video, it was so fun to watch.  After his date on Saturday, he and 29 others piled into our backyard and watched a big screen movie and ate s'mores.  So much fun.  I'm going to miss not having anyone to dote on for dances next year :(

Homecoming week this week!  Keaton is taking one of his cute officer friends.  I guess we'd better get working on a shirt, tie and corsage!  That is one great part about having all boys, dance attire is easy.  No modesty fights--haha!  I'm looking forward to helping cook scones at the Homecoming Powwow on Wednesday and then helping with the tailgate party before the football game on Friday.  Reliving my youth:)

School is out!  Summer is here!  Now I have to find a way to keep my house stocked with food!  Having four hungry, growing boys taxes my creativity in the food department.  Coming up with dinner is one thing, but my boys snack snack snack and that's my dilemma!  I want to have good snacks that are good for them on hand, but I also don't want to be in the kitchen baking/making all day!  Hmmm.... I'll get my thinker thinking and in a separate post come up with some good snack ideas.  In the meantime, here's my menu for the week:

I'm helping with a course my husband is teaching this weekend.  I'm going easy style for lunch (ordering from a local bistro), but I'm going to conquer the breakfasts myself.  I'm putting this on my blog so I remember for next time.  Here is what I'm doing:

Saturday Breakfast:  Raspberry Cinnamon French Toast and one Apple Cinnamon with Raspberry and Maple Syrup, Bacon and/or Sausage, Boiled Eggs and Sliced Fruit  THIS RECIPE WAS PERFECT FOR SERVING GUESTS!  IT WAS BEAUTIFUL AND DELICIOUS.  I HAD SEVERAL COMMENTS ON IT.  I USED GREAT HARVEST CINNABURST BREAD.

Another wonderful General Conference of the Church of Jesus Christ of Latter-day Saints.  I'm so grateful to have a living prophet upon the earth, offering us guidance and counsel.  What a great blessing!

Judson and I returned last night from beautiful Vancouver, BC.  It was absolutely gorgeous!  We stayed at a hotel on the harbor by Stanley Park and enjoyed many walks along the boardwalk, gawking at the yachts.  So much fun!  It was delightful to be together, although I did miss the boys.  I always do when we're traveling.  Shout out to my niece Jennifer and her husband, Chris for taking such good care of the troops while we were away.  On to a new week....

Happy St. Patty's Day!

Yup, St. Patricks Day.  I'm not one of those clever moms who makes leprechaun footsteps leading to the pot of gold on the kitchen table.  But I think the kids will be much more excited with the Lucky Charms I bought (it's been over a decade since the charms have shown their face in my kitchen--I just love them too much;).  So, here's to sugared cereal and the only day of the year that everyone feels at liberty to pinch whomever they wish.  What a weird holiday!

The wedding this weekend was absolutely beautiful!  A barn transformed into a dream land.  I've uploaded a few of the photos.  Admittedly, the crepe and hot chocolate bar and was a smashing success.  People were snapping pictures of it right and left.  I was really happy with the way it turned out.  The entire day was perfect.  Judson's parents flew in from their mission in France and surprised us!  His dad performed the sealing ordinance in the temple, it was really special.

Sweet Sunday today.  There was a beautiful feeling as Chase was ordained to the office of a Teacher in the Aaronic priesthood.  We loved spending time with good friends, old and new.  We are blessed.
This week's menu:
Monday:  Chicken and Butternut Stew with Mixed Greens and Croissants
Tuesday:  Rice Cooked in Black Beans (sounds boring, but this recipe is spectacular!) This is how I cook my black beans, they are delicious! with Veggie Mix and Cuban Pork Roast
Wednesday:  Linguine with Chicken and Sauteed Vegetables and Fruit Platter
Thursday:  Apple Chicken Sausage and Endive Salad with Blueberries and Pecans
Friday:  I'm hosting a bridal shower for my darling niece, we're having Taco Salad as the main course.  I use these recipes:  Mel's Taco MeatSlowcooker Refried BeansTortilla bowls,
Chopped lettuce, Wholly Guacamole, Gregory's Ranch Dressing, and Homemade Salsa

Florida was glorious.  Sunshine on my face and sand between my toes, I loved it!  Keaton held down the fort and did a great job.  I even came home to a clean kitchen.  Here's my menu for the week:

Saturday:  Mom's Night Off!
Sunday:  Dinner with Friends  (Bring Rocky Road Fudge Brownies and Ice Cream for dessert)

Today marks 18 years of marriage for Judson and me!  Wow!  It's hard to believe we're almost to our 20 year anniversary.  We're celebrating by a trip to Florida later this month.  So tonight I'll make one of his favorite dinners, and we'll celebrate with the kids (how romantic, huh?).

Here we go again, late winter and early spring sports are starting up.  Busy, busy around here.  Keaton=lacrosse, Chase=snowboarding, Brooks=basketball and Landon, well Landon's not so into sports, but he is in the school play as a munchkin.  So fun!  Piano recital this week, along with Keaton's birthday.  It's gonna be a good one....
