I love the thought of Spring Break coming next week!  We've been enjoying beautiful weather and the company of great friends.  Life is good!

Here's my menu for the week:
Monday:  Beef Stroganoff over Egg Noodles, Sauteed Green Beans, Honey Lime Fruit Salad with Coconut Cake for Dessert (I use heavy cream rather than Cool Whip in that recipe--much better!)
Tuesday:  Chicken Cordon Bleu with Rice, Green Salad and Rolls
Wednesday:  Broccoli Cheese Soup with Ham and Cheese Toasties
Thursday:  Enchiladas
Friday:  Leftovers

Keaton's mission papers are in!  What a surreal experience to think that in the next 6 months I will be blessed with a missionary!  I'm still trying to wrap my brain around a graduating senior.  Wow!  Life is flying.  I'm loving it!  Judson surprised me with an awesome 40th birthday party.  I  must say, it was my favorite birthday yet.  Somehow 40 is empowering.  I just feel so grateful for such wonderful family, friends and blessings in my life.  Here's to the next 40 years!

Monday:  Roasted Cauliflower and White Cheddar Soup with Croissant Sandwiches
Tuesday:  Leftover Enchiladas from my birthday party, Fruit and Green Pasta Salad
Wednesday:  Hawaiian Turkey Burgers
Thursday:  Chili and Breadsticks
Friday:  Mom's Night Off :)
Saturday:  Waffles, Eggs and Canadian Bacon
Sunday:  Roast, Mashed Potatoes, Carrots and Rolls

This week holds bunches of fun!  Keaton's State Sterling Scholar Awards Banquet is tomorrow, crossing my fingers for him that he'll be crowned the Utah Computer Technology Sterling Scholar.  So happy for him that he was selected as his school's scholar and the region sterling scholar, hoping for the best from the state competition.  Then Landon has his darling play, Aladdin on Wednesday, Friday and Saturday.  Chase has wrestling.  Chase and Brooks have a region basketball tournament.  And last but not least, my birthday is on Saturday!  Judson always knows how to spoil me, so I'm sure it's going to be a great day and great week!

Friday:  Mom's Night Off :)
Saturday:  Birthday Dinner!

Monday:  Grandma and Grandpa Return from their Mission!  We're getting together for Pizza and Salad.  I think I'll take this Taco Salad
Tuesday:  Salsbury Turkey Steaks, Butternut Squash, and Garlic Roasted Cauliflower
Wednesday:  Southwest Chicken Salad
Thursday:  Chicken Bacon Crockpot Chowder with Kale Waldorf Salad
Friday:  Quiche and Muffins
Saturday:  Mom's Night Off :)
Sunday:  Wall Family Get Together

I want to make this Baked Spice Granola this week as well.
