After a busy week last week, I'm ready for some down time.  But this house needs some serious de-cluttering!  I'm trying to motivate myself to go through all of my closets and do a major DI run.  Here's to hoping....
Here's my menu for this week:
Monday:  Brown Sugar Meatloaf with O'Brien Potatoes and Steamed Broccoli  YUM
Tuesday:  Burrito Pie  YUCK
Wednesday:  Oven Roasted Trout with Lemon Dill Stuffing, Green Salad and Glazed Baby Carrots  (TROUT IS STILL IN THE FREEZER :)
Thursday:  Chicken Fettucine Alfredo with Spinach Salad and Fruit YUM
Friday:  Brooks' Birthday Dinner!  He wants to go to Chilis
Saturday:  Quesadillas and Soup
Sunday:  Easter dinner with Larson Family--I'm bringing these AWESOME POTATOES and a Caesar Salad YUM

I'm helping with a course my husband is teaching this weekend.  I'm going easy style for lunch (ordering from a local bistro), but I'm going to conquer the breakfasts myself.  I'm putting this on my blog so I remember for next time.  Here is what I'm doing:

Friday Breakfast:  Breakfast Burritos including:  Tortillas (of course), scrambled eggs, onion/pepper mixture, pico de gallo, diced avocados, bacon and/or sausage, cheese, sour cream and hashbrowns with sliced fruit

Friday Lunch:  Ordered from Plates and Palates
Pear and Pecan Salad
Lemon Tarragon Pasta Salad
Assortment of ham, roast beef, turkey and vegetarian sandwiches
Heath Brownies
White Chocolate Orange Cheesecake Bars

Saturday Breakfast:  Raspberry Cinnamon French Toast and one Apple Cinnamon with Raspberry and Maple Syrup, Bacon and/or Sausage, Boiled Eggs and Sliced Fruit  THIS RECIPE WAS PERFECT FOR SERVING GUESTS!  IT WAS BEAUTIFUL AND DELICIOUS.  I HAD SEVERAL COMMENTS ON IT.  I USED GREAT HARVEST CINNABURST BREAD.

Saturday Lunch:  Ordered from Plates and Palates
Mango Avocado Chicken Pasta
Strawberry Chicken Green Salad
4 Quarts Corn Chowder
4 Quarts Creamy Cauliflower with Sage and Parmesan Soup
Baci Rolls with Butter
Carrot Cake
Coconut Cake

Another wonderful General Conference of the Church of Jesus Christ of Latter-day Saints.  I'm so grateful to have a living prophet upon the earth, offering us guidance and counsel.  What a great blessing!
On another note, my sister-in-law recommended that I tell people which recipes I like after I try them.  So, I'm going to try to do that every week.  I'll just edit my posts with with what I thought of the recipe. We'll see how long it lasts!

Monday:  Fish Tacos  YUM
Tuesday:  Split Pea Soup with Ham and Breadsticks  YUM
Wednesday:  Copy Cat Noodles and Company Bangkok Thai Noodles with Parmesan Chicken (I couldn't find the rice noodles last week, so I'll try again this week at the Asian Market or Trader Joes)  GOOD, WOULD BE EXCELLENT IF YOU ADD AN EXTRA HALF CUP OF SWEET CHILI SAUCE TO THE PEANUT SAUCE
Thursday:  Chicken in Basil Cream with Wild Rice and Steamed Broccoli YUM
Friday:  Egg in a Boat with Incredible Hulk Smoothie YUM
Saturday:  Mom's Night Off!
Sunday:  Dinner with Friends  I'm going to make these Deep Dish Molten Lava Cookies with Vanilla Ice Cream for dessert! GOOD, WOULD BE GREAT IF YOU DECREASED SUGAR TO 1.5 CUPS

Tuesday:  My favorite Lentil Soup (use chicken broth instead of water, 4 cloves garlic, and 3 Tbsp. balsamic vinegar) with Homemade whole wheat bread YUM
Wednesday:  Copycat Noodles and Company Bangkok Thai Noodles with Parmesan Chicken
Thursday:  Ciabatta Jack Sandwich, Coleslaw and Chips OK
Friday:  Mom's Night Off
Saturday:  Larson Family Dinner--Cafe Rio Salads
Sunday:  Wall Family Dinner--Lasagna, Rolls, and Green Salad
