I love the thought of Spring Break coming next week!  We've been enjoying beautiful weather and the company of great friends.  Life is good!

Here's my menu for the week:
Monday:  Beef Stroganoff over Egg Noodles, Sauteed Green Beans, Honey Lime Fruit Salad with Coconut Cake for Dessert (I use heavy cream rather than Cool Whip in that recipe--much better!)
Tuesday:  Chicken Cordon Bleu with Rice, Green Salad and Rolls
Wednesday:  Broccoli Cheese Soup with Ham and Cheese Toasties
Thursday:  Enchiladas
Friday:  Leftovers
