School is out!  Summer is here!  Now I have to find a way to keep my house stocked with food!  Having four hungry, growing boys taxes my creativity in the food department.  Coming up with dinner is one thing, but my boys snack snack snack and that's my dilemma!  I want to have good snacks that are good for them on hand, but I also don't want to be in the kitchen baking/making all day!  Hmmm.... I'll get my thinker thinking and in a separate post come up with some good snack ideas.  In the meantime, here's my menu for the week:

Monday:  Homemade Cafe Rio (I make a ton so there are leftovers they can have for lunch during the week)
Tuesday:  Steak Salad (Great way to use up the leftover steak from Sunday)
Wednesday:  Young Men's Activity--BBQ
Thursday: Crockpot Chicken Cacciatore over Pasta with Peas and Fruit
Friday:  Mom's Night Off!
Saturday:  Tuna Melts with Tomato Soup
Sunday:  Marinated Salmon with Rice Pilaf, Lime and Garlic Brussel Sprouts with Nectarine Cobbler and Vanilla Ice Cream
