We've had a killer tomato harvest this year!  I'm on my fourth harvest, and after making several batches of tomato soup, spaghetti sauce and salsa I'm just about 'tomato'd' out.  So don't be surprised to see lots of tomatoes on my menu this week--I need to get these eaten before they go bad!

Monday:  Balsamic Roasted Pork LoinRoasted Garlic Cauliflower, Mashed Potatoes and Spinach Salad
Wednesday:  Sloppy Joes with Chips and Salsa and Relish Tray
Thursday:  Parmesan Chicken with Double Tomato Bruschetta and Green Beans
Friday:  Mom's Night Off!
Saturday:  Dinner with the Larsons--Homemade Cafe Rio
Sunday:  Dinner with the Wall family
