I'm realizing I need a place to keep track of all the recipes I'm really liking these days. So, here are some good ones!
Tonight we had these Marinated Chicken Kabobs and they are by far my favorite chicken kabob recipe! I use whatever veggies I have on hand--tonight we I used zucchini, red onion, mushrooms and pineapple. Also, I'm trying to get away from using sugar in recipes so I replaced the brown sugar with maple syrup. So good!
Along side the kabobs, we had this delicious Mushroom Rice Pilaf. It was really good and a great way to use the leftover rice from the Thai takeout we had this weekend.
Earlier today I made these Paleo Zucchini Muffins. I realized too late that I had only 1/8 cup of coconut flour, so I made some adjustments. Rough adjustments included using about 1 1/2 cups almond flour and maybe 1/3 cup arrowroot flour along with the 1/8 cup coconut flour I had. I sprinkled some fresh blueberries to the top of each muffin before baking. They were delicious! I had to cook them at 350 degrees for 25 minutes. Winner!
And last night I made this fantastic Air Fryer Juicy Chicken recipe. I make it about once a week, we love it! Last night I added some halved purple fingerling potatoes and I loved it. I highly recommend this recipe! I've had to play a bit with the temperature and timing of the recipe. Last night I air fried it at 400 degrees for 60 minutes, turned the chicken over and air fried at 400 for an additional 10 to 15 minutes.
