Here's my menu for the week:
Sunday Breakfast: Breakfast Strata with Bacon (gluten free) with Toast and OJ
Sunday Dinner: Grilled Ahi with Loaded Baked Sweet Potatoes/Potatoes, Crispy Roasted Radishes and Apricot Green Salad and Strawberry Pie
Monday: Won Ton Chicken Salad with French Bread and Assorted Cheeses
Tuesday: Grilled Flank Steak, Stuffed Mushrooms, Hashbrowns (with leftover potatoes from Sunday) and Steamed Green Beans
Wednesday: Pork Tenderloin, Balsamic Roasted Carrots and Beets, Simple Green Salad and French Bread
Thursday: Crispy Quesadillas with Sautéed Pepper Medley
Friday: At the Lake :)
Saturday: Mom's Night Off
