What a fantastic first week of summer we had!  We spent the weekend in Eden, and LOVED it!  Besides a raging sunburn on my neck, it was great to be back on the boat.
Here's my menu for the week:

Monday:  Bibimbap (Korean rice and meat dish--delicious) with Sauteed Korean Cucumbers
Tuesday:  Balsamic Roasted Pork Tenderloin with Garlic Roasted Potatoes and Green Salad
Wednesday:  Easy Thai Chicken with Easy Vegetable Lo Mein
Thursday:  Slow Cooked Cuban Sandwich Recipe
Friday:  Grilled Steak and Chicken with Watermelon, Corn on the Cob, and Green Salad
Saturday:  Mom's Night Off :)
Sunday:  Father's Day BBQ at Modersitzkis
