Well, I have been MIA since the end of December! After an intense semester in graduate school, I think I'm ready to start planning my meals again and grocery shopping :) I have actually been using meal plans delivered to my door for the past semester, and I'm not gonna lie, it was pretty dreamy. But I figure with summer coming soon, and all the fresh produce that brings, I won't want to be ordering meal kits when I can make fabulous salads and fruit plates out of my own back yard. So, for now, I'm going to start planning and shopping again. I'm actually going to use some of the recipes from the meal kits that my family liked, as well as other fun new recipes I find on the internet. I'm still taking classes over the summer, so meals will be SIMPLE and hopefully TASTY!

Monday: Memorial Day
Tuesday Simple Slow Cooker Korean Beef Soft Tacos with Cucumber Salad
Wednesday: Jalapeno Cheddar Turkey Burgers with Roasted Sweet Potato Fries
Thursday: Sesame Ginger Chicken Meatballs Rice Bowls with Roasted Broccoli and Carrots
Friday: Mom's Night Off :)
Saturday: Ham and Cheese Mini-Quiche with Fruit
Sunday: Persian Chicken
