Back At It!

 I'm realizing I need a place to keep track of all the recipes I'm really liking these days.  So, here are some good ones!

Tonight we had these Marinated Chicken Kabobs and they are by far my favorite chicken kabob recipe!  I use whatever veggies I have on hand--tonight we I used zucchini, red onion, mushrooms and pineapple.  Also, I'm trying to get away from using sugar in recipes so I replaced the brown sugar with maple syrup.  So good!

Along side the kabobs, we had this delicious Mushroom Rice Pilaf.  It was really good and a great way to use the leftover rice from the Thai takeout we had this weekend.   

Earlier today I made these Paleo Zucchini Muffins.  I realized too late that I had only 1/8 cup of coconut flour, so I made some adjustments.  Rough adjustments included using about 1 1/2 cups almond flour and maybe 1/3 cup arrowroot flour along with the 1/8 cup coconut flour I had.  I sprinkled some fresh blueberries to the top of each muffin before baking.  They were delicious!  I had to cook them at 350 degrees for 25 minutes.  Winner!

And last night I made this fantastic Air Fryer Juicy Chicken recipe.  I make it about once a week, we love it!  Last night I added some halved purple fingerling potatoes and I loved it.  I highly recommend this recipe!  I've had to play a bit with the temperature and timing of the recipe.  Last night I air fried it at 400 degrees for 60 minutes, turned the chicken over and air fried at 400 for an additional 10 to 15 minutes.

We really like Paleo Banana Muffins made from this recipe.  I usually make them in little mini muffin tins and top them with some dark chocolate chips

We returned home today from a fantastic Larson Family Thanksgiving holiday!  5 days in St. George with my children, my mom and her husband, most of my siblings and their children made for a very fun time!  We enjoyed E-biking and hiking Snow Canyon, Big Shotz Golf, fantastic Thanksgiving feast, movies, games and lots of laughs!  

I always love walking in my door when I've been away from a while. I love coming home!  Now to think about food for the upcoming week.  Here's my tentative menu:


Monday:  Tortellini Vegetable Soup (I think I'll add chicken) with a yummy Kale/Apple Salad

Tuesday: Black Pepper Rub Chicken Fingers with Yogurt Ranch with a Pomegranate Green Leaf Salad

Wednesday:  Healthy Chipotle Chicken Sweet Potato Skins with a classic Green Leaf Salad

Thursday:  Ratatouille with Spicy Italian Sausage and Creamy Polenta with Steamed Broccoli

 Bloggin' again!  Just got back from a vacation, so I'm feeling like cooking again!  Here's my menu for the week:


Monday:  Cool Ranch Chicken Tostadillas with Honey Lime Crema  Pretty good recipe.  We didn't love the tostadas, they ended up chewy.  But the ones I did that were just single layer were good.

Tuesday:  Creamy Garlic Corn Chicken with Cheesy Polenta  Excellent recipe.  Added the juice of one lemon to the chicken--YUM!

Wednesday:  Sheet Pan Sticky Pomegranate Chicken and Honey Roasted Squash served over rice.

Thursday:  Crockpot Chicken Meatballs with Creamy Orzo (I'll use arborio rice rather than orzo to make is gluten-free, as well as chicken stock rather than white wine)

Friday:  Date Night!

Saturday:  If there's anything left from this week's menu, it's on the plate tonight!

Sunday:  Making this delicious White Chicken Chili for a family party.  Some tips for this chili--heat the cream cheese and half the chicken broth in a glass bowl in the microwave for a minute or two, then use the immersion blender to get a nice creamy consistency without lumps.  Also, I don't use low-sodium chicken broth and I probably add about 1.5 tsp salt to this recipe.  Also, if I have time, I'll roast the onion and peppers.  


Here's My Favorite Chili Recipe  (the key to this recipe is to double, if not triple, the salt).  I also find it most flavorful if I make it the day before.  Make sure to serve with shredded cheese and sour cream!

Monday:  Won Ton Chicken Salad with French Bread and Assorted Cheeses
Tuesday:  Grilled Flank Steak, Stuffed Mushrooms, Hashbrowns (with leftover potatoes from Sunday) and Steamed Green Beans
Wednesday:  Pork Tenderloin, Balsamic Roasted Carrots and Beets, Simple Green Salad and French Bread
Thursday:  Crispy Quesadillas with Sautéed Pepper Medley
Friday:  At the Lake :)
Saturday:  Mom's Night Off
