Tuesday: Easy Chicken Satay with Vegetable Rice, Steamed Broccoli and Egg Rolls
Wednesday: Skillet Chicken and Zucchini Enchiladas with Tomatillo Sauce with Mexican Quinoa and Green Salad
Thursday: Crockpot Lasagna with Garlic Bread and Spinach Salad
Friday: Leftover Mother's Day dinner--Judson made some yummy chicken, potatoes and carrots in a delicious cream sauce. He made a lot, so it will be a perfect leftover meal :)
Saturday: Mom's Night Off :)
Sunday: Dinner at a friend's house. I'm bringing this dessert Eclair Cake (but I'm going to use real whipped cream instead of whipped topping)
Really does taste like eclairs! I used just 3 cups milk and I made real whipped cream instead of whipped topping, just be careful folding it in. Also, instead of the chocolate sauce Paula made, I made a quick ganache using semisweet chips and equal part cream.
